Those of you who have bought my organic dining guide Healthy Eats Here! have already been properly introduced to wunderchef Kevin Callaghan.  He is the Grand Poobah and Keeper of the Spatulas at Acme Restaurant in Carrboro, N.C.

What you might not know is that not only is Chef Kevin prodigiously talented and prolific, but he is also witty, articulate and possessed of a sincere, non-faddish, enduring commitment to sustainability and community.  He’ll buy the whole hog, not just the loin, and figure out delicious, healthful and dazzling ways of using everything from tail to squeak.  This helps the farmer, helps the restaurant and helps us, the lucky eaters.

He is also Not Fat, which, let’s face it, is the important thing here.  ;)  It’s also pretty impressive when you consider the amount of duck confit the man can concoct.

Funny, I asked him that very question:

He stays Not Fat the same way I do, despite all the restauranting — and, let’s face it, flagrantly joyful eating — that I do (as evidenced by this video).
